Muffins!
I've been having a lot of fun with Mark Bittman's How To Cook Everything Vegetarian that Maltune gave me for Christmas. All cooking is fun, but baking is my favorite! Bread, cookies, scones, and MUFFINS! This recipe is great for those times you have ONE overripe banana. Not quite enough to make banana bread, so what do you do with it?
Strawberry Banana Muffins (adapted from Mark Bittman)
Ingredients-
3 tablespoons melted butter
1 cup all purpose flour
1 cup whole wheat pastry flour
1/3 cup honey
1/3 cup yogurt
3 teaspoons baking powder
1 egg
1 smooshed very ripe banana
1/2 cup diced and smooshed strawberries (other berries would work, too OR for just banana muffins substitute another ripe smooshed banana for the berries.)
Step 1- Preheat oven to 400ºF. Grease a 12 cup muffin tin or line with paper muffin cups.
Step 2- Beat together the egg, yogurt, honey and melted butter. Add the smooshed fruit. Pour this over the dry ingredients and combine till moistened.
Step 3- Spoon the batter into muffin cups. Bake for 20-30 mins or until toothpick inserted comes out clean.

i don't have any bananas, over-ripe or otherwise. can i just steal some of your muffins?
